Ingredients
4 Turkey Cutlets, Steaks or boneless Turkey Breast slices* (12 oz/350 g)
2/3 cup (150 mL) fine Bread Crumbs
1/4 cup (50 mL) Parmesan Cheese
1/2 tsp (2 mL) dried Thyme
1/2 tsp (2 mL) dried Tarragon
1/4 cup (50 mL)light Mayonnaise
Directions
Pound turkey to 1/4" (0.5 cm) thickness. In a shallow dish, combine bread crumbs, Parmesan cheese, thyme, tarragon and salt and pepper to taste. Brush both sides of cutlets with mayonnaise, then coat with crumb mixture. Cook cutlets in a frypan with 1 tbsp (15 mL) vegetable oil for 4 - 5 minutes on each side over medium-high heat. You can also substitute low-fat yogurt for mayonnaise to further reduce fat.

Tip
As an alternative, place cutlets in oiled pan and bake at 375° F (190° C) for 25 minutes, just until turkey is no longer pink in centre.
