Ingredients
4 slices (approx. 1lb/500g) of boneless Turkey Breast or fillets
½ cup (125 mL) Apple Juice
2 tbsp (25 mL) liquid Honey
1 tbsp (15 mL) Olive Oil
1 tbsp (15 mL) chopped fresh Mint or 1 tsp/5mL dried, crumbled (optional)
1 tsp (5 mL) Lemon Juice
¼ tsp (1 mL) Cinnamon
Directions
Mix all ingredients except turkey in a shallow dish. Stir thoroughly to blend honey with juice and seasonings. Add turkey pieces, turning to coat both sides. Cover and marinate in refrigerator for 4 hours (or overnight), turning occasionally. Remove turkey from marinade, pour liquid into small saucepan and set aside. Barbecue turkey on oiled grill over medium-high heat for 5 – 7 minutes on each side, just until meat is no longer pink in centre. Add 2 tbsp (25 mL) water to marinade. Heat to a boil, boiling for at least 5 minutes. Serve as a sauce with turkey.

Tip
Try this tasty alternative: Pan-fry turkey in 2 tsp. (10 mL) vegetable oil over medium-high heat for 4 – 5 minutes on each side. Add reserved marinade and 2 tbsp (25 mL) water and heat to boiling. Reduce heat and simmer turkey until meat is no longer pink in centre.
