Turkey Beans ’n Greens Salad
- Ingredients
- 2 cups (500 mL) cooked Turkey, cubed
- 1/4 cups (50 mL) Olive Oil
- 1 each, Green and Red Bell Peppers, diced
- 1 Tomato, diced
- 1 clove Garlic, minced
- 2 tbsp (25 mL) finely chopped Green Onions
- 1 cup (250 mL) cooked Green Beans, cut
- in 1" (2.5 cm) pieces (optional)
- 3 tbsp (45 mL) Balsamic Vinegar
- 1 can (19 oz/540 mL) Chickpeas (Garbanzo Beans)
- rinsed and drained
- Directions
- In a large frypan, heat oil and stir-fry peppers 3 - 4 minutes. Add tomato, turkey, garlic and onions, and stir-fry 1 - 2 minutes. Add green beans, balsamic vinegar and chickpeas. Place in salad bowl, season with salt and pepper to taste and garnish with fresh parsley, if desired. You can also use smoked turkey or turkey roast from the deli as an easy start to this recipe.

- Diced turkey is perfect for pizza, salads, soups and pasta. Vary the size, according to your needs.
