Ingredients
1 cup (250 mL) cooked Kidney Beans, drained
1½ lb. (750 g) Ground Turkey
1½ cups (375 mL)medium or hot Salsa, divided
½ cup (125 mL) chopped Onion
1 Egg
1 tbsp (15 mL) minced Garlic
¾ tsp. (3 mL) Salt
1 tbsp (15 mL) Oregano
1 tsp (5 mL) ground Cumin
Directions
In a large bowl, mash the beans slightly with a spoon or fork; add turkey, ½ cup salsa, onion, egg, garlic, salt, oregano and cumin. Mix thoroughly and pack into an 8” x 4” loaf pan or shape into a loaf in a shallow baking pan. Bake at (350˚F) 180˚C for 1¼ hours or until juices run clear. Drain and let stand 5 – 10 minutes before slicing. Heat remaining salsa and serve spooned over meat loaf. VARIATION: TURKEY TERRINE : Chill the meat loaf and serve on lettuce or as an open face sandwich with cold salsa.
