West Coast Oriental Turkey Salad
- Ingredients
- 1 lb (500 g) cooked Turkey Breast
- 1 head Iceberg Lettuce, shredded
- 2 cups (500 mL) Bean Sprouts
- 4 Green Onions, sliced
- ¼ cup (50 mL) Soy Sauce
- ¼ cup (50 mL) Rice Vinegar
- ¼ cup (50 mL) Sesame Oil
- 2 tbsp (25 mL) liquid Honey
- 2 tbsp (25 mL) Hoisin Sauce or paste
- 2 tbsp (25 mL) Water
- 2 tbsp (25 mL) toasted or black Sesame Seeds
- 2 tsp (10 mL) minced fresh Ginger Root
- 2 tsp (10 mL) dry Mustard
- 1 cup (250 mL) Chow Mein noodles or fried Egg Noodles or fried Won Ton Strips
- 12 thin slices pickled Red Ginger or Carrot Flowers (optional)
- Directions
- Cut turkey into narrow strips; set one-third of strips aside. Toss remaining turkey, lettuce, bean sprouts and onions in service bowl or wok. Arrange reserved turkey on top; chill. Whisk together soy sauce, vinegar, oil, honey, hoisin sauce, water, ginger root and mustard. At serving time pour over salads; sprinkle sesame seeds and noodles on top. Garnish with red ginger or carrot flowers, if desired.
