Ingredients
½ cup (125 mL) Yogurt, plain, low fat
⅓ cup (75 mL) Mayonnaise, light
⅓ cup (75 mL) Chutney, chopped
¾ tsp (3 mL) Curry Powder
1 lb (500 g) Turkey, cubed, cooked (dark and white meat)
1 ½ cups (375 mL) Celery, diagonally sliced
½ cup (125 mL) Raisins
1 Green Onion, sliced
1 Apple, large, red, cubed
4 Lettuce leaves or Pumpernickel Bread slices
½ cup (125 mL) Peanuts (optional)
Directions
Mix yogurt, mayonnaise, chutney and curry powder until well blended. Stir turkey, celery, raisins, onion and apple into dressing. Cover and chill until serving time. For each serving, spoon 1 cup (250 mL) onto lettuce or bread. Garnish with peanuts, if desired, and additional red apple slices.
