Calypso Turkey Salad
- Ingredients
- ½ cup (125 mL) Yogurt, plain, low fat
- ⅓ cup (75 mL) Mayonnaise, light
- ⅓ cup (75 mL) Chutney, chopped
- ¾ tsp (3 mL) Curry Powder
- 1 lb (500 g) Turkey, cubed, cooked (dark and white meat)
- 1 ½ cups (375 mL) Celery, diagonally sliced
- ½ cup (125 mL) Raisins
- 1 Green Onion, sliced
- 1 Apple, large, red, cubed
- 4 Lettuce leaves or Pumpernickel Bread slices
- ½ cup (125 mL) Peanuts (optional)
- Directions
- Mix yogurt, mayonnaise, chutney and curry powder until well blended. Stir turkey, celery, raisins, onion and apple into dressing. Cover and chill until serving time. For each serving, spoon 1 cup (250 mL) onto lettuce or bread. Garnish with peanuts, if desired, and additional red apple slices.
