Couscous Turkey Burger with Fruit Salsa
- Ingredients
- ⅓ cup (75 mL) Couscous, quick cooking
- ⅓ cup (75 mL) warm Water
- ¾ lb (375 g) Ground Turkey
- 1 tbsp (15 mL) Lemon Juice
- 1 tsp (5 mL) Oregano or Sage, dried
- ¼ tsp (1 mL) Ground Pepper
- 2 Garlic cloves, minced
- 2 Whole Wheat Buns, halved and toasted
- Fruit Salsa (optional – recipe below)
- Fruit Salsa:
- ¾ cup (175 mL) Peaches, Pears, or Pineapple, diced fresh or unsweetened canned and drained
- 1 ½ tsp (7 mL) Lemon Juice
- 1 ½ tsp (7 mL) Lemon rind, grated
- 3 tbsp (50 mL) sweet Red Pepper, diced
- 1 Green Onion, chopped
- 2 tbsp (25 mL) seedless Cucumber, diced
- 1 tbsp (15 mL) packed Basil or Parsley, coarsely chopped
- pinch Chili Peppers, crushed

- Directions
- Burger:
Combine couscous and water; let stand 5 minutes. Mix with turkey, lemon juice and seasonings until well combined. Shape lightly into 4 patties. Grill or broil about 5 minutes per side or until no longer pink inside. Serve on toasted bun halves and top with salsa or serve on lettuce and top with a tomato slice.
Fruit Salsa:
In a glass bowl combine all ingredients. Let stand at least 30 minutes or chill up to 1 day for fresh fruit or 1 week for canned fruit.
