Turkey Souvlaki with Wine Sauce
- Ingredients
- ¾ cup (175 mL) dry White Wine
- ¼ cup (50 mL) Olive Oil
- 1 tbsp. (15 mL) Lemon Juice
- 2 cloves Garlic, minced
- ¼ tsp. (1 mL) dried crumbled Rosemary
- ¼ tsp. (1 mL) Salt and Pepper
- 2 tsp. (10 mL) Oregano
- 2 Bay leaves (optional)
- 1 ¼ lbs. (625 g) skinless, boneless Turkey Breast cut into 1” (2.5 cm) cubes
- 1 Red or Green Pepper, cut into 1” (2.5 cm) squares
- 1 large Onion, cut into wedges and separated into layers
- Directions
- In a large bowl, combine wine, oil, lemon juice, garlic, rosemary, salt, pepper, oregano and bay leaves (optional). Stir in turkey cubes. Cover and refrigerate 4 to 8 hours to marinate, stirring occasionally. Stir in pepper and onion pieces; remove bay leaves. Thread turkey, pepper and onions alternately on 4 skewers. Grill or broil 5” (12.5 cm) from heat about 12 to 15 minutes, turning occasionally and basting with marinade. Serve cooked souvlaki on warm pita bread, on orzo or rice.
