- 6 slices cooked Turkey (1 oz/30 g each)
- 2 tbsp (25 mL) course-grained Mustard
- 1 tsp (5 mL) Honey
- Freshly ground Pepper
- 3 slices, peeled Cantaloupe
- 3 slices, peeled Honeydew Melon
- Lettuce
- Sprigs of Mint
- Directions
- Combine mustard, honey and pepper. Spread mustard mixture on the turkey slices. Top each slice of turkey with a slice of cantaloupe or honey dew melon. Roll up “jellyroll” fashion. Secure with toothpicks. Cut each roll crosswise in 4 pieces. Serve on a bed of lettuce. Garnish with mint sprigs.
