- 4 Turkey Fillets 3 oz (100 g) each
- 2 tsp (10 mL) Vegetable Oil
- 2 tbsp (25 mL) dried Bread Crumbs
- Paprika
- 1 tbsp (15 mL) Vegetable Oil
- 1 clove Garlic, minced
- 4 medium Tomatoes, peeled, seeded and coarsely chopped
- 4 Green Onions, sliced
- ½ tsp (2 mL) crushed dried Oregano
- 2 tsp (10 mL) dry White Wine
- 2 tbsp (25 mL) chopped fresh Italian Parsley
- 2 tsp (10 mL) chopped Black Olives

- Directions
- Brush turkey fillets with 2 tsp (10 mL) vegetable oil. Sprinkle with dried bread crumbs and paprika. Bake at 350°F (180°C) approx. 30 minutes. Heat 1 tbsp (15 mL) vegetable oil in skillet. Add garlic and sauté lightly. Add tomatoes, green onion, oregano and wine. Bring to boil and simmer 3-4 minutes. Place turkey fillets on serving plates and spoon tomato sauce over turkey. Top with chopped parsley and black olives. Garnish with lemon twists.
