Spicy Orange Turkey Stir Fry
- Ingredients
- 10 oz (300g) cubed cooked Turkey
- ¼ cup Water
- 2 tbsp (25 mL) dry Sherry
- 1 tsp (5 mL) Sugar
- ½ tsp (2 mL) crushed Red Pepper
- 1 tbsp (15 mL) Vegetable Oil
- 1 medium sweet Red Pepper, cubed
- 6 oz (200g) Snow Peas, ends snipped off
- 1 tbsp (15 mL) grated Orange rind
- 1 tbsp (15 mL) minced fresh Ginger
- 2 tsp (10 mL) Corn Starch
- ½ cup (125 mL) sliced Water Chestnuts
- Orange wedges
- Italian Parsley
- Directions
- Combine water, sherry, sugar and crushed red pepper. Add turkey and set aside. Heat vegetable oil in skillet. Add sweet red pepper, snow peas, orange rind and ginger. Stir fry 2 minutes. Drain turkey, reserving marinade. Add corn starch to marinade and stir to combine. Add turkey, marinade and water chestnuts to skillet and cook stirring constantly until thickened. Garnish with orange wedges and Italian parsley.
