Ingredients
4 Turkey Fillets
Marinade:
½ cup (125 mL) Apple Juice
1 tbsp (15 mL) dark Rum
Apple Accompaniment:
1 tbsp (15 mL) Vegetable Oil
2 cooking Apples, coarsely chopped
1 tsp (5 mL) Lemon Juice
1 small Onion, chopped
¼ cup (50 mL) Apple Juice
2 tbsp (25 mL) Raisins
Dash Nutmeg
Apple Rum Sauce:
⅔ cup (150 mL) Apple Juice
2 tbsp (25 mL) dark Rum
2 tsp (10 mL) Honey
1 tbsp (15 mL) Corn Starch
2 tbsp (25 mL) cold Water
Directions
Combine marinade ingredients and marinate turkey fillets 2 hours. Grill turkey fillets just until pinkness disappears. Combine Apple Accompaniment by first combining lemon juice with chopped apple. Heat oil in skillet and sauté apples and onion 2-3 minutes. Stir in apple juice, raisins and nutmeg. Reduce heat and cook 2 minutes. Set aside. Prepare Apple Rum Sauce by combining apple juice, rum and honey. Bring to boil. Stir corn starch into cold water and add to boiling liquid. Cook one minute. To serve, arrange Apple Accompaniment beside fillet on serving plates and drizzle with Apple Rum Sauce.
