Ingredients
1 tbsp (15 mL) Olive Oil
12 oz. (350 g) boneless Canadian Turkey Breast, cut in strips
4 cups (1L) Spinach, torn and washed
8 oz. (250 g) Fusilli pasta, cooked and drained
2 cups (500 mL) Cherry Tomatoes, halved
2 oz. (50 g) Feta cheese, crumbled
Dressing:
1 tbsp (15 mL) Olive Oil
2 Garlic cloves, minced
1 tbsp (15 mL) Lemon Juice
¼ tsp (1 mL) Salt
½ tsp (2 mL) Oregano
Directions
Heat oil in large skillet. Stirfry turkey until golden brown. Season with salt and pepper. Add spinach, cover and steam until spinach is wilted. Combine remaining ingredients including dressing in a large bowl and toss. Add pasta mixture to turkey and stir to combine. Garnish with black olives, if desired.
