Ingredients
12 oz (350 g) cubed Turkey Roast
2 cups (500 mL) cubed fresh Pineapple
2 cups (500 mL) shredded Romaine Lettuce
2 cups (500 mL) shredded Radicchio Lettuce
2 tbsp (25 mL) flaked Coconut
Lime twists
Dressing
2 tbsp ( 25 mL) Vegetable Oil
¼ cup (50 mL) Pineapple Juice
½ tbsp (7 mL) dark Rum
½ tsp (2 mL) Lemon Juice
Dash Angostura Bitters
Directions
Combine two types of lettuce and divide among 4 serving plates. Combine turkey, pineapple and coconut and place on lettuce. Combine dressing ingredients and drizzle over salads. Garnish with lime.
