- 12 oz (350 g) cubed Turkey Roast
- 2 cups (500 mL) cubed fresh Pineapple
- 2 cups (500 mL) shredded Romaine Lettuce
- 2 cups (500 mL) shredded Radicchio Lettuce
- 2 tbsp (25 mL) flaked Coconut
- Lime twists

- 2 tbsp ( 25 mL) Vegetable Oil
- ¼ cup (50 mL) Pineapple Juice
- ½ tbsp (7 mL) dark Rum
- ½ tsp (2 mL) Lemon Juice
- Dash Angostura Bitters
- Directions
- Combine two types of lettuce and divide among 4 serving plates. Combine turkey, pineapple and coconut and place on lettuce. Combine dressing ingredients and drizzle over salads. Garnish with lime.
