Ingredients
1 ¼ lbs. (500 g) Turkey, diced
6 cups (1.5 L) Turkey stock
1 ½ Garlic cloves
1 ½ Carrots, diced
1 chopped, onion
4 cups (1 L) peeled, canned tomatoes
.75 oz (21 g) fresh basil, chopped
Directions
In a heavy saucepan on medium heat, using a half-cup (125 mL) of stock, cook the carrots, onions, turkey and garlic until vegetables are tender. Add remaining stock and tomatoes. Cover and simmer for 20 minutes. Just before serving, stir in basil.
