- 4 slices Bread, crusts trimmed, cut into quarters
- 6 Eggs
- 1 ½ cups (375 mL) Milk
- 4 slices Turkey Bacon, diced and cooked
- ½ cup (125 mL) shredded fat-reduced Cheddar cheese, divided
- 1/3 cup (75 mL) sliced white Mushrooms
- ¼ tsp (1 mL) Salt
- ½ cup (125 mL) frozen hash brown Potatoes, thawed
- Directions
- Preheat oven to 350°F (180°C). Spray a 9x9x2 inch (23 x 23 x 5 cm) baking pan with cooking spray. Arrange bread slices in pan, overlapping slightly; set aside. Beat together eggs, milk, turkey bacon and 1/4 cup (50 mL) cheese in a large bowl. Add mushrooms and salt. Pour mixture over bread slices. Sprinkle potatoes and remaining cheese over egg mixture. Bake until lightly browned and knife inserted near centre comes out clean, about 35 minutes. Serve immediately.
